(Serves 6) Ingredients:
  • 1/2 head of cauliflower, broken into florets
  • 4 tbsp Melt Organic Salted Butter Sticks, melted
  • 1 tsp turmeric
  • 2 tbsp curry powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp freshly ground black pepper
  • 6 corn tortillas
Topping:
  • 1 mango
  • 1/2 small red onion
  • 2 stalks scallions
  • 1 tsp salt
  • 1 lime
Directions:
  1. For the topping, dice the mango and red onion into small pieces, and slice the scallions. Afterwards, add salt and fresh lime juice. Gently mix then set aside until ready to serve.
  2. In a large bowl, add the cauliflower, Melt Organic butter, turmeric powder, curry powder, garlic powder and salt and pepper. Gently toss to coat.
  3. Bring a large skillet pan to medium heat. When ready, add the coated florets and allow to cook for 6-9 minutes, stirring occasionally, until softened, fragrant and golden. Turn off heat.
  4. In the meantime, warm up the tortillas according to preference.
  5. When all is ready, serve immediately alongside the topping.
  6. Layer the cauliflower over the tortillas, scoop generous amounts of the topping, garnish to your heart’s desire, and enjoy!
